TALK TO ME!!!Monday, 31 March 2008 The past week was in fact extremely busy.. haha.. had my practical test on wed.. which i failed one of the item.. which was stupid poach eggs.. i did 13 attempts altogether.. and still, chef Bob was happy with it.. so i gotta redo it.. but i did well for the others.. haha... up to a new module now.. Preparing Appetizers and Salads.. woah.. i love this.. haha.. all bcoz it makes us do things really fast and makes lessons end early.. just like on last thurs.. we completed all our salads by 3.45pm.. and suppose to do washing up.. class is to be dismissed at 5pm.. but chef peter had a meeting.. so we got 30 mins break.. if there hadn't been a break.. we would have left class 30 to 45mins early.. =) had a competition in class last thurs.. salad making competition.. haha.. and guess what?? i won it!!!?!?!?!!~ LOL.. damm tyco lah.. all i used was unwanted veg, some apples, mixed it and created my own dressing.. i created my very own cinnamon dressing.. chef say he was impressed with it.. very creative.. haha.. really proud of myself.. =) All glory to God.. hehe.. ![]() First up is a Waldorf salad.. this history of this salad is a german guy who did this salad in London.. at a hotel called Waldorf hotel.. haha.. i reckon that this salad is really good.. very healthy.. made with ingredients that contains alot of anti-oxidents and full or vitamins as well.. ![]() Next up is Warm baby potato salad.. haha.. very nice.. extremely easy to make.. but the potatoes take a very long time to boil till the perfect softness.. i consider this to be a heavy salad.. bcoz of all the potatoes.. one of my favours.. can be improved alot more by adding some meat to it.. haha.. ![]() Next up is a caesar salad.. it's very nice.. but if u are not a fan of cheese, please dont take this.. this salad is high in calcium.. especially with the anchovies and cheese inside of it.. good stuff i feel.. ![]() This is the caesar salad made by chef peter.. very beautiful stuff.. this salad originated back to the time where julia caesar reign and rule.. this salad was made specially for him.. and it is really a few hundred year old salad.. ![]() Here we have a Grilled Avacado and tomato salad with basil pesto.. made by chef peter.. it's a demo, so we only get to eat it and not make it.. i personally don't really like it bcoz i'm not a fan of avacados.. LOL.. ![]() Ok.. here is the salad that i've created.. i have not given a name for it yet.. let's just call it benben salad bah.. haha.. it's the one that i've made and won with it.. haha.. it's made of a cinnamon dressing.. it doesnt look really appetising.. but it taste good.. it has a sweet and sour sensation after eating it considering cinnamon being used with it.. it goes extremely well with the apples and the vegetables.. it's very high in vitamins and wonderfully present in colours.. ![]() Top view of the benben salad.. And lastly to spoil ur appitite.. this is the amount of waste that we have by the end of lesson.. it's a big rubbish bin that is half filled with salad inside.. if this can be fed to the needy, it could last 50 families a week i suppose.. haha..ok.. blog till here.. nxt post coming up soon shortly.. =) Monday, 17 March 2008 ok guys.. i'm here to blog.. haha.. this time i'll be blogging about what i usually do in school.. hehe.. since everyone back home has been asking me about it.. haha.. so i'll just tell u all about my curriculum in school bah.. during kitchen lessons.. haha.. =) ![]() Ok.. haha.. 1st up.. is the pic of the stoves that we have during my normal kitchen class at the small scale kitchen.. hehe.. will post more pics nxt time about it.. haha.. more detailed ones.. ![]() nxt up is my large scale kitchen.. where our team work at every friday night for the restaurant.. preparing food with the restaurant with our chef.. Jean Mahe.. it is divided into 4 main sections in terms of cooking.. Desert, Entrees, Main Course and Vegetables.. This was my favourite equipment in the kitchen when i was in the Desert Section in Table D'hote menu 1.. haha.. it's used to melt the icing sugar on top of the orange torte and the caramel for the creme caramel..
i remember what happened on the friday that has just passed.. haha.. i was in the entree section.. and i was in charge of preparing the tagliatelle with tomatoes, eggplants and oregano.. haha.. and alan was like daring me to do flipping.. like flip the tagliatelle in a very big pan.. it's realy damm heavy.. somewhat like 2kg or something.. and he showed me.. showing how easy is it.. haha.. and so i keep on practicing.. made quite a mess.. but at the end of the night, i was able to flip the tagliatelle very smoothly.. it built up my confidence alot.. haha.. although u might not get to read this.. but thanks alan..

Sunday, 9 March 2008 I really love large scale kitchen days in school.. Although everyone is out usually out at night at northbridge or else where clubbing and getting themselves drunk.. but i'm at the kitchen till late.. preparing food for guests at bentley pines restaurant working with a magnificient team of chefs.. Especially my chef lecturer - Jean Mahe (pronounce as john.. he's french) He's a very intersting guy to work with.. Always aiming for perfection at a very fast pace.. someone whom u can really talk to and joke with.. I really see him as a great mentor.. With his tons of years of experience, i really respect him I really feel really blessed in school.. in normal class, i have a great bunch of friends.. whom i can talk and interact with.. Talk together, laugh together and joke about with.. they dont judge you.. they will go all out to help you.. I have great chefs that i'm under.. Bob Fielding and Peter Dodd.. really love their lessons.. although it's long freaking hours, i always go home learning something new from them about being a chef.. in restaurant class, i have great classmates as well.. with lots of great working capability who i love to talk to and work with.. extremely sociable.. always putting in the 101% of effort to work hard and learn more.. Great lecturers that i'm under.. whom always never fail to impress us.. in large scale kitchen days.. great chef lecturer.. great bunch of pals whom i work with.. great team leader - Alan.. the italian guy.. great team members - michiko, sumie and adam.. great environment to work at.. coming to tafe really make me feel a sense of belonging i feel like i've finally found the place where it really suits my character.. a hyperactive person like me who enjoys moving about, cutting stuff with sharp objects, flipping and turning stuff around and loves to make alot of noise.. the kitchen is indeed the best place for me.. it is so unlike normal classes in singapore that doesnt spark the slightest interest in me at all.. it's boring theory class everyday with no fun.. full of stress down here is all hands-on.. i really love school.. |
